Breakfasts for every day this week ..


Legend has it that breakfast is of course, the most important meal of the day, but not too many of us actually eat it !!

At least a third of people say they sacrifice breakfast for some extra time in bed or to get to work earlier.

Understandable I guess and especially tricky if you have young ones to get out on the school run too.

So how do you start your day? What do you have for breakfast?

I think a lot of us have been brainwashed into thinking cereal and toast is the best, quick and healthy option..

WRONG!

Breakfast doesn’t have to be sugar laden or be as simple as pouring milk in a bowl over cereal.

Breakfast is the perfect opportunity to get your day off to a cracking start nutritionally and keep you filled up and not reaching for the biscuit tin at 11am.. IDEAL BEAKFASTS should be PROTEIN BASED ….

Here are 7 breakfast ideas for every day of the week that I think you’ll like .. If you do give any a try TAKE A PIC AND TAG ME IN THE GROUP :)

I think this first one inspired by the lovely chef James Martin will tickle those taste buds AND it’s using seasonal foods which you know I love

Monday: egg muffins

Eggs , milk , salt and whatever you wish to go in , I like bacon and mushroom , or spinach and red pepper

Beat eggs, add milk seasoning and add your filling , Spray a muffin pan with oil , fill tray with mix and bake for 25mins TADAA

Tuesday .. Overnight Oats

  • 40g porridge oats

  • 200g fat free natural yogurt

  • Mixed blueberries, strawberries and raspberries

  1. Layer the porridge, yogurt and fruit in a jar or bowl. Cover and put in the refrigerator overnight. In the morning stir so all the layers are mixed together and top with more fruit.

Tip: Swap the berries for different Foods - pear and blackberry, orange and peach, or apple and cinnamon, Banana and peanut butter .

Wednesday: Omelettes

Goats cheese and roasted tomato Omelette.

Simply pop the tomatoes in the oven for a few minutes or add to a hot pan to soften. Remove. Cook your omelette as usual, adding the cooked tomatoes and crumbled goats cheese, seasoning before folding over and cooking for another couple of minutes..

Mushroom, tomatoes and herb: Add sliced spring onions, mushrooms and tomatoes with a dash of mixed herbs to a hot pan and cook until softened. Remove. Cook your omelette as usual, adding the greens and fold in half before serving immediately.

Thursday: Smoothies.

Mixed Berry Smoothie Mixed berries (strawberries, raspberries and blueberries) Coconut milk or almond milk(unsweetened)

A touch of cinnamon Chai seeds to taste Handful of spinach Simply whizz up

Friday: Banana Pancakes

Enough said! Truly delicious and without doubt a hug on a plate!

Mash one banana in a bowl, add a dash of cinnamon, ground almonds and a whisked egg. Whisk together until well mixed into a thick smooth texture. Spoon a small disc onto a hot pan and cook for approx 2 minutes on each side. Serve immediately with natural yogurt, berries and a dash of cinnamon.

Saturday:Poached egg with avocado on Toast. – my absolute favourite

Yes I know I suggested toast

Put one or two eggs in a pan to poach. In the meantime, peel, de-stone and slice or mash 1/2 an avocado – adding a touch of lime / lemon and salt and cracked black pepper to season. Spread the avocado onto the toast and add the egg on top or the on the side depending on preference. Season with salt and pepper, chilli flakes and serve immediately.

Sunday: all day breakfast …

Go ahead … have some bacon and eggs .. you can even add some mushrooms , tomato and a good sausage !!!!
